Omega-3 Golden Chicken Wellington – Lightest & fluffiest pastry

Ingredients (Makes 6 servings)

1 small onion, sliced

1 cup mushrooms, sliced thinly

 3.5 tbsp. Oleumm8, divided

 1 sheet phyllo pastry

½ of a medium wheel of brie



  1. Preheat oven to 350 °F and line a baking sheet with parchment paper, set aside.
  2. On a clean, poultry cutting board, make an incision in each chicken breast, lengthwise, with a paring knife, without cutting it into 2 separate pieces. Season chicken breasts with 2 tbsp. oleumm8, half of the fresh thyme, salt and pepper.
  3. In a large sauce pan, cook seasoned chicken over medium heat with 1 tbsp. oleumm8, flip and continue until browned, and cooked through.
  4. Remove from heat, stuff chicken with mozzarella and remaining thyme, and close chicken breasts, so that they look like they were prior to being cut.
  5. On a clean surface, lay out 4 sheets of phyllo pastry. Brush phyllo with oleumm8, using a pastry brush.
  6. Place first prepared chicken breast on one end of the phyllo, and roll up, then tuck the loose sides underneath the breast, and repeat with a second sheet of phyllo. Brush the top of the phyllo wrapped chicken breast with more oleumm8, and place on prepared baking sheet. Repeat with second chicken breast.
  7. Bake for 8 minutes in preheated oven, or until phyllo is golden brown. Remove from oven, cut in halves, or in thirds for entertaining, and enjoy!

This food is low in Sodium. It is also a good source of Protein, Vitamin A, K and Niacin, a very good source of Vitamin E (Alpha Tocopherol), Omega 3 and Omega 6 in a healthy ratio.
