Omega-3 Seared Scallops with Spinach and Polenta

Ingredients (Makes 2 servings)

  • 1 cup cornmeal
  • ¼ cup Oleumm8, divided
  • 2 cups milk
  • 2 cups vegetable broth
  • ½ cup parmesan, grated finely
  • ¼ tsp. salt
  • ¼ tsp. ground pepper
  • 4 cups spinach
  • 16 scallops
  • Extra parmesan, shaved for garnish

 

Directions

  1. In a medium saucepan, bring milk and vegetable broth to a boil.
  2. In the meantime, over medium-low heat, sauté spinach in 2 tbsp. Oleumm8 and remove from heat, once wilted.
  3. Once milk and vegetable broth are boiling, whisk in 1 cup cornmeal and keep whisking over low heat for 1-2 minutes until combined and thickened, stir in grated parmesan, and salt and pepper and simmer for 10 minutes over low heat, stirring frequently.
  4. Pan sear scallops in medium pan with 2 tbsp. oleumm8 until lightly browned on both sides, and cooked through.
  5. Plate polenta (cooked cornmeal) on 2 plates, spread spinach over polenta, and top with seared scallops. Drizzle with a little oleumm8, if desired, and top with shaved parmesan.

This food is a good source of Protein, Vitamins A, C, E, K, B12, Phosphorus and Selenium, Omega 3 and Omega 6 in a healthy ratio.
