(Makes 20 fritters)

  • 1 cup quinoa, dry
  • ¾ yellow onion
  • 1 tbsp. oleumm8
  • ½ large sweet potato, peeled and grated
  • 2 cups spinach, chopped
  • 10 sprigs of fresh thyme, picked and chopped
  • ¾ cup vegan cheese, grated
  • 2 flax “eggs” *
  • ½ tsp pepper
  • ¼ tsp salt
  • + More oleumm8 for frying fritters
    *To make 1 flax egg, mix 1 tbsp. ground flax seed with 2.5 tbsp. water, stir and let sit for
    5 minutes.


  1. Cook quinoa, as per packaging, or add 1 cup quinoa and 2 cups water to a small
    saucepan, and bring to a boil with lid on. Once boiled, stir, reduce to lowest heat,
    place lid back on, and cook until liquid is absorbed. Set aside to cool slightly
    while preparing other ingredients.
  2. Slice onion into thin slices, lengthwise and sauté in a pan with 1 tbsp. Oleumm8,
    over medium low heat, stirring occasionally, until fragrant, remove from heat.
  3. Peel and grate ½ large sweet potato.
  4. Roughly chop spinach.
  5. Wash, pick and chop fresh thyme.
  6. Prepare 2 flax eggs.
  7. In a large bowl, combine warm, cooked quinoa with sautéed onion, sweet
    potato, spinach, thyme, flax eggs, cheese, salt and pepper and mix well. * Use a
    wooden spoon or other kitchen utensil for this, as the mixture will still be very
    hot from the cooked quinoa.
  8. Heat 1 tbsp. oleumm8 in a pan, over medium heat. Form fritters slightly smaller
    than a ¼ cup in size and press down into the prepared frying pan. Cook fritters in
    Oleumm8 oil until slightly browned, about 3 minutes each side, and then flip,
    and cook until cooked through. Repeat with remaining batter, until all used up.
  9. Enjoy fritters on their own, with a dip, or over a salad!

This food is very low in Cholesterol. It is also a good source of Manganese, and a very good source of Vitamin A and Vitamin K.
